«Big Break» – cafe for students and teachers of a University

Problem

«Big Break» is a cafe with one hall for 40 seats and one kitchen. It will be located in rented premises on the first floor of the university, converted into an eating establishment. The cafe is supposed to serve snacks and drinks from semi-finished products, which will significantly reduce cost of food purchasing, and, as a result, the amount of start-up capital, as well as save on kitchen equipment and number of personnel, namely: cooks. «Big Break» cafe will be positioned as an establishment in the lower price category. The average price of a check in a cafe will be 5.5 USD.

Solution

It is necessary to provide a meal to a large number of people and to do it quickly, satisfyingly and inexpensively. This requires fresh products and variety of dishes should be various.

Market and size

In the area in which the establishment will be located, there are about 50 thousand inhabitants. Besides, there are several large offices and shopping centers. Potential circle of clients is people aged 22 to 60 with an average and lower-middle income. In percentage term, the number of residents who meet the above criteria is about 15%, or 7,500 residents of the district. Of this number of residents, about 20% or 1500 people visit such establishments at least once a week. Target audience - students of higher education institutions (17-26 years old) - clients with an average and lower-middle income (200-450 rubles a month). Average check - 15-20 rubles.

Customer

Target audience: - students, teachers and employees of the university; - students and teachers of other universities; - residents and guests of a city.

Competition

Taking into account that besides our cafe there are 2 more serious competitors within a radius of 500 meters (at the premises of BTEU), our cafe can count on 30% of the public catering market in this area. In numerical terms, this is about 500 regular visitors per week or 2000 people per month.

Team

The team consists of university students Anastasiya Kyzmenko and Shrub Yaroslavl. We got the first experience of participating in startups and implementing entrepreneurial ideas during Erasmus+ SMART project implementation . It is a good opportunity for part-time work and practical training for students of lyceums. Besides, it provides fulfillment of a social function.
